I decided to start a blog as an outlet, and to share some of the things I find interesting. I am constantly on the go, and feel like I need a way to wind down and express a little of my creative side, so here I am!

Friday I got an urge to cook. My favorite place to look for recipes is www.Skinnytaste.com. The creator is Gina Homolka and I would call her nothing less than a genius!! I have tried a few of her recipes and have thoroughly enjoyed each one. The recipes are simple, especially for an ametuer like me. Friday, I made her Chicken Rollatini with Spinach alla Parmagiana, you can find the link below. My pictures do not hold a flame to Gina Homolka's but it was delicious!!The recipe took about 20 minutes to prepare, 25 minutes to cook, and about 5 minutes to scarf down.

My boyfriend Joe comes from a large family of Italian cooks. So you can understand my hesitation when cooking for him! His mother makes the most amazing meals. When we first started dating, I would go to his house, already full, and eat another meal! Her food is just too good to pass up! He loved the meal and ate left overs for two days! Joe took his mom a piece of the chicken and she loved it. I guess I am pretty good for an ametuer, or www.Skinnytaste.com just makes it easy to look like a pro in the kitchen!
